Brewster LF/LFC
The Brewster is a hybrid instrument measuring the fat and/or
casein content in milk. The system is designed for use in
the dairy production area as both a standardizer and pipette
sample tester. The Brewster LF is designed for fluid milk
applications measuring butterfat only. The Brewster LFC is
designed for cheese milk applications measuring butterfat
and casein.
Using patented
laser light scattering technology, the Brewster LFC
discriminates between component particle size to obtain fat
and casein measurements without interference from other milk
components. A closed-loop control system then modulates the
various product flow rates based on fat and casein readings
from the instrument by controlling throttling valves to
achieve the desired C/F ratio in the final cheese milk.

Deviation) divided by average of reference results
multiplied by 100. Reference methods used are: Röse Gottlieb
for fat, Kjeldahl for protein, and Polarimetry for lactose.
